CONDEMNATION OF FOOD INSPECTED AT RIVERSIDE WHARVES.
As a result of the daily Inspection of City Wharves, 168 loads of unsound
food were removed from these places during the year 1919 by the Cleansing
Department.

The Material so disposed of comprised:-

A large portion of the above was removed at the request of the owners.
DAIRIES, COWSHEDS AND MILKSHOPS' ORDERS.
No applications for registration have been received during the year, the
orders still being temporarily superseded by the Milk (Amendment) Order, 1917,
made under the Defence of the Realm Act, which requires all persons selling milk
by retail to be registered with the Ministry of Health.
The number of persons so registered is 118, as compared with 124 in 1918,
and as against 580 persons whose names appear on the Register of Dairymen and
Purveyors of Milk.
All premises occupied by persons registered to retail milk have been subjected
to periodical inspection and the same conditions have been imposed as required
by Regulations made under the Dairies, Cowsheds and Milkshops' Orders, to insure
the cleanly storage and sale of milk and of the proper hygenic surroundings being
maintained.
EXAMINATION OF MILK FOR TUBERCULOSIS AND CONDITIONS
AS TO CLEANLINESS.
During the months of May and June, 27 samples of milk were collected at
the City railway termini and submitted to bacteriological and chemical examinations.
These samples were taken from supplies from the following counties:Essex
9, Norfolk 7, Suffolk 6, Cambridgeshire 3, Huntingdonshire 1, Bedfordshire
1.
In brief the objects of the enquiry were to ascertain:-
(1) whether the milk was clean;
(2) whether it was free from pathogenic bacteria, especially the tubercle
bacillus, and
(3) whether water had been added or fat abstracted.
The Bacteriologist reports with regard to (1) and (2) as follows:-
