TUBERCULOSIS.—As in previous years a special note has been made of
seizures in the Central Markets, under this heading.
The increase is due to carcases and offal being sent direct from "Control
Slaughterhouses" for examination and decision by the City Inspectors.

COLD STORES.—There are now 15 Cold Stores within the City Area with a
total capacity of 34,070 tons stored "ship style" or about 25,000 tons "store
style" which at present has had to be abandoned due to excessive supplies on hand.
The work of the Inspectors is always difficult in Cold Stores because it is
impracticable to open chambers and to examine their contents.
It therefore follows that a responsible duty falls upon the proprietors of
Cold Stores, to report at once to the Sanitary Authority any food of a doubtful
nature belonging to them or in their possession. It would appear desirable that
Official Regulations should be framed so that the exact measure of responsibility
for meat contained in Cold Stores may be assessed. The length of time of deposit
in stores, questions associated with removal and re-admission, of cleanliness of
Cold Stores, and of registration of products deposited are matters which should
also be dealt with.
