68 housing.
Bakehouses.—There were 75 such premises on the special Register at the close of the
year, 17 being "level" and 58 "underground." Baking was given up during the year in 3
underground bakehouses, and 2 were re-opened. When a bakehouse is reopened after closure,
a special inspection is made to see that the place is in accordance with the prescribed requirements,
and that cleansing, usually with some improvements, is carried out.
Of the 75 bakehouses on the Register, 10 are "factories," but are nevertheless under the
jurisdiction of the Department, the special provisions of the Public Health (London) Act,
1891, over-riding the general rule under the Factory Act. Sixty-nine (69) inspections were
made of the " factory bakehouses," and 373 of the remaining 65 premises.
