6.—USEFUL FOOD PREPARATIONS FOR INFANTS.
Albumin Water.—Take the white of a fresh egg and break it
up with a clean pair of scissors. Shake it up well in a clean bottle
with six ounces of water and a pinch of salt, strain through muslin,
sweeten with a little sugar. This may be given alone or with milk.
Suitable for infants and children who digest milk badly.
Barley Water.—Place a teaspoonful of washed and wellcrushed
barley in a jug, pour on it a half-pint of boiling water, stand
it by the fire for an hour, stirring frequently, and then strain through
muslin. This should be made fresh every day.
Beef Juice.—Take a piece of fresh raw beef, mince it very
finely; place it in a cup and cover with pure cold water to which a
little salt has been added. Let it stand for one hour, then strain it
through muslin. A teaspoonful of this may be given to an infant
with or without milk. It must be made fresh.
Lime Water.—This may be obtained of any chemist.
