2. Deficiency in milk fat (11) varying from a minimum of
3 per cent. to a maximum of 52.6 per cent., viz., 3., 5, 6, 6.6,
7, 10, 15, 29, 35, 36, 52.6.
3. Extraneous water and fat deficiency (3), viz., 1.5 and 3.9,
10 and 10, 16 and 13.3.
4. Added preservatives (1), viz., 2.266 grains per pint boric

5. Skimmed milk (14—11 genuine, 3 adulterated), viz., 9, 12
and 17.3 per cent, extraneous water.
6. Separated milk (24—19 genuine, 5 adulterated), viz., 1, 6,
9, 14.2, 18.5 per cent, of extraneous water.
Of the total number of milk samples taken during the year
under review, 539 were taken on week-days and 133 on Sundays.
Samples were taken on 23 Sundays in the year. Of the 539 weekday
samples 41 (i.e., 7.6 per cent.) were adulterated, while out of
133 samples taken on Sundays, 19 (i.e., 14.3 per cent.) were
adulterated.
It will be noted that the percentage of adulteration in the
case of the samples taken on Sundays, as compared with those
taken on week-days, was double in the case of the first-mentioned.
Butter.
One hundred and sixty-four samples of butter were taken,
and of these 10 (i.e., 6.1 per cent.) were reported by the Analyst
to be adulterated, as compared with a percentage of adulteration
during 1908 of 12.7. The form of adulteration found to be
present in these ten samples was in all ten cases added foreign
fat.
The added margarine ranged from a minimum of 30 per cent,
to a maximum of 84 per cent., viz., 30, 40, 52, 70, 70.5, 73.4,
73.7, 76.5, 82.5, 84.
In respect of these ten adulterated samples proceedings were
taken, and in each case a conviction was obtained on prosecution.
Proceedings were taken in one case in connection with butter
sampling for obstructing the Inspector. The Inspector reported
that he sent his agent to purchase a sample of butter. After
she purchased the sample she laid it down with some other
articles she had in her hands for a moment. The wife of the
vendor went to the door evidently to watch for the Inspector,
and having apparently caught sight of him approaching she
called out and the vendor walked round from behind the
counter and snatched the butter away, and then served
