The following circular letter was sent to every purveyor of milk in
Islington:—
Town Hall,
Sir, Upper Street, N.
PRESERVATIVES IN MILK.
I am directed to inform you that the Local Government Board have requested the attention
of my Council to the subject of the addition of preservatives to milk, and have suggested,
in view of the finding of the Departmental Committee on Preservatives and Colouring
Matters that their use is not only unnecessary for its preservation but injurious to persons
consuming it, that the Council should notify to milk dealers that action will be taken under
the Sale of Food and Drugs Acts in all cases where preservatives are found.
Under these circumstances I have to inform you that in future all milk purchased or
procured for analysis by the Public Analyst will be examined for preservatives, and that
should they be discovered, proceedings will follow.

Groceries.—151 samples, or 12.7 per cent. of all articles examined by the
Public Analyst, were analysed, of which only 3, or 2.0 per cent., were adulterated,
as compared with 6.7 per cent. in 1905 and 9.1 per cent. in 1904.
