Notwithstanding this adulteration, the analyses of the railway milks show
that they were of a higher quality than the other milks sold in the borough.
This is proved by the following statement:—
No. of Samples Analysed. | Percentage of Fat. | Percentage of Solids, not Fat. | Percentage of Total Solids. | |
---|---|---|---|---|
Railway Milks | 112 | 3.87 | 8.66 | 12.53 |
Week Day Milks | 323 | 3.72 | 8.51 | 12.23 |
Sunday Milks | l6l | 3.68 | 855 | 12.23 |
Official Standard | ... | 3.00 | 8.50 | 11.50 |
This of course shows that by fixing so low a standard a wide door is left open for the abstraction of fat from milks as they arrive in London from the country.
