Notwithstanding this adulteration, the analyses of the railway milks show
that they were of a higher quality than the other milks sold in the borough.

This is proved by the following statement:—

This of course shows that by fixing so low a standard a wide door is left open for the abstraction of fat from milks as they arrive in London from the country.

Public Analyst, were analysed, of which 10, or 67 per cent., were adulterated,
as compared with 9*1 per cent, in the preceding year.
