Milk.—6011samples were examined, of which 47 or 7.8 per cent. were
adulterated, as compared with 9.8 per cent. in 1903. and 9.9 per cent. in 1902.
164 samples were purchased on Sundays, of which 6 or 3.6 per cent. were
adulterated; 317 were obtained on week days, of which 41 or 12.9 per cent.
were sophisticated; and 120 were procured at railway stations, of which none
was reported against, a fact which goes a long way to prove that the
sophistification of milk occurs mainly in London and not at the farms.
Quality of the Milks.—The average quality of all the milks analysed
was good, as they showed 3.83 per cent. of fat, as compared with the official
standard of 3.0 per cent. The quality of the farmers' milks, that is of those
procured in course of transit at railway stations, was the highest, giving 3.97
per cent. of fat, compared with 3.78 per cent. from the milks purchased on
Sundays, and 374 per cent. from those obtained on week days.
The analyses of these milks also show that they were in all probability
slightly watered, for the percentage of non fatty solids shows a slight departure
from the farmers' milks, which contained 8.62 per cent. as compared with 8.52
per cent. in the case of the Sunday milks and 8.48 per cent. in that of the weekday
milks.
