Special attention is paid to those shops where the occupier is
found to be at all dilatory in the removal of offal, or does not pay
sufficient attention to the cleanliness of the premises.
The greatest difficulty in dealing with these premises arises during
the summer, when the question of the irregular removal of offal sometimes
becomes acute, and necessitates incessant visitation of these
places.
Early in the year a circular letter was sent by order of the Public
Health Committee to occupies of fried fish shops, calling attention to
the necessity of great care being exercised in the storage of offal, and
the frequent removal of the same. This letter has had a good effect,
but constant supervision is nevertheless required.
It is satisfactory to note that no complaints have been received as
the results of inspection by other authorities.
