SLAUGHTER-HOUSES.
(See List in Appendix).
There are in the Borough seven slaughter-houses; 24 visits havebeen
paid to these premises by Mr. Jones, the Inspector under
whose charge they are. He reports that they are whitewashed
twice a year and are in a satisfactory condition ; no notices were
served and no licence was opposed at the sessions.
Owing to the small amount of slaughtering now done in the
Borough these premises are seldom found in an unclean condition;
in the few instances where the business is above the average the
limewashing and cleansing are done more frequently. Sheep are
the only animals killed, except at Christmas, when a few of thebutchers
signalise the occasion by killing a prize bullock or so
apiece. It is satisfactory to note that, so far as we are aware, no
cows are slaughtered. These animals frequently develop tuberculosis
through being kept in dark sheds, and the meat is always of adoubtful character; a private slaughter-house offers opportunities
for killing and dressing animals such as would not be passed in a
public abattoir.
The butchers evidently find it more profitable to deal in foreign
meat, and the nearness of Smithfield Market enables them to pay
daily visits for the purpose of purchasing that which is most reasonable
in price.
All the slaughter-houses have back entrances, with the exceptionof o
ne in Brick Lane ; this one has a passage adjoining the shop,
and the licence is granted on the express condition that only sheep
are to be slaughtered.
ICE CREAMS.
The London County Council General Powers Act, 1902, cameinto
operation on November 1st last : it provides as follows:—
Any person being a manufacturer of or merchant or dealer in ice creams or
other similar commodity who within the County—
(a) Causes or permits ice creams or any similar commodity to bemanufactured,
