of fat. The total solids in the milk from dairy or mixed
milk varied from 11.68 to 14.34, the fat from 2.89 to
5.61, and the non-fatty solids from 8.4 to 9.7, but no
information being given of the number of cows forming
each of the 55 dairies no average can be struck, as it is
evident there must be greater fluctuations in the
quality of small as compared with large dairies.
