ABSTRACT OF THE QUARTERLY REPORTS
OF THE PUBLIC ANALYST,
For the Year ending March 25th, 1895.
The total number of samples of food analyzed
was 371, consisting of Milk 203 samples, Butter 69,
Groceries 50, Lard 31, Bread and Flours 10, and
Spirits 8. Of all these, only 15 samples of Milk,
2 of Butter, and 2 of the Groceries, were found to
be adulterated.
This shows a diminution of adulteration in this
Pairsh as compared with last year; this year only
5 per cent, of the articles sold to the Inspector
proved to be adulterated, last year the percentage
was 15.
Milk continues, as in former years, to be the
most adulterated article, per cent, of the samples
proving to be either watered or skimmed. This is,
however, much below the general average for London
which is 25 per cent. The extent of adulteration
ranged from the addition of from 5 to 20 per cent.
of water, and the abstraction of from 15 to 48 per
cent. of cream.
