MILK.
As in previous years a large number of the samples taken
have consisted of milk, altogether 186 having beeu submitted for
analysis. Fifty of these, 36·7 per cent., were found to be adulterated
either by the removal of fat, or by the addition of water
in varying quantities. It is again my duty to emphasize the
great importance of a proper supply of milk, both from a public
health and an economic standpoint. As the main article of
consumption among the younger members of the population it
is essential that its good quality be maintained. It has been
calculated that each head of population of England and Wales
consumes milk to the value of £1 per annum. In a
parish like Clerkenwell, with a population of upwards of 66,000
the annual expenditure upon milk must reach an enormous
figure.
